Open back headphones are very good at imaging and soundstage--that's their special trick. Closed back headphones struggle to achieve that same level of depth and width, even the ones that use angled drivers or other design tricks to try and replicate those characteristics.
So, I don't think either of the pairs you've mentioned will sound quite as wide as the HD599. I pulled my DT770's and H6 Pros out of my closet o' tech, and ran some simple listening tests on them again, just to refresh my brain. The 770 is slightly better on width and imaging.
However, it also has a brighter and more treble-forward sound thanks to that classic Beyer sound signature you've heard about. Those two things go hand in hand; the enhanced treble makes spatial detail easier to discern. If you're looking to EQ out the Beyer treble peak, you could start by reducing the levels around 6500 Hz and 9000 Hz by a few dB. Those are the frequencies that most often spike on the older Beyerdynamic speakers.
You could also look into the newer generation of Beyer headphones that have these spikes reduced thanks to new drivers and tuning. The DT 700 X doesn't have a mic, but it has superior tuning--and a price that's usually lower than the MMX 300, at least in my territory. It's weird how much regional prices differ! Beyerdynamic headphones tend to be cheaper outside the US, something I'm frequently envious of!
The HS80 is nice and comfy, but the virtual surround algorithm is nothing special compared to any other system on the market or the Windows Sonic system you can use for free if you're on Windows 10 or 11. Without any processing, the heasdet has a worse sound than any of the others we've been talking about.
I don't think you could go wrong with either of the models you've been talking about, but the Beyers will have the edge if width is the most important thing to you. Again though, hopefully it won't be discouraging when they sound a little more closed off than the HD599's you're used to. That's just the nautre of physics.
